In celebration of National Pina Colada Day (July 10th) we made these cool & refreshing popsicles.
What you need:
2 cups sliced strawberries
3 tablespoons sugar
1 ounce rum
1 1/2 cups fresh pineapple cut into chunks
1 can coconut cream – unsweetened
1/4 cup sugar
1 oz white rum
1 teaspoon lime juice
What you do:
Place the first three ingredients in a blender and purée. Pour the strawberry mixture into popsicle molds and put in the freezer.
Rinse out the blender and put the remainder of the ingredients in the blender and purée. Top off the molds with the pineapple mixture and freeze for at least 4 hours.
Makes 12 popsicles.
