Spicy Pepitas (Pumpkin Seeds)

If for any reason, you want to encourage your guests to drink, Spicy Pepitas, will do it.  Add a little more chile and cayenne pepper that I recommend below, and Spicy Pepitas will do it double..

You’ll need:
Seeds from one large pumpkin
½ teaspoon cayenne pepper
1 teaspoon ground ancho (or other chile) powder
1 teaspoon ground cumin
1 teaspoon salt
Juice from 1 lime

Remove the seeds from the pumpkin and rinse under cool water, removing any remaining pulp. Spread the seeds out in a single layer on a cookie sheet and dry overnight.

Combine the spices and lime juice in a small bowl. Spoon the mixture onto the pumpkin seeds and stir until well coated. Spread the seeds back into a single layer and bake at 300 degrees for 30 minutes, tossing every 10 minutes. Let the seeds cool & enjoy!
