Chocolate Kahlua Mousse

What you need:

6 ounces semi sweet chocolate
3 cups heavy cream, divided
¼ cup Kahlua
3 tablespoons sugar
Cocoa powder, optional for garnish
Mint leaves, optional for garnish

What you do:

Melt the chocolate, either in a double boiler or in a microwave. If you’re using a microwave, be very careful. Melt the chocolate in stages. If you overdo it, the chocolate will ‘seize up.’

Whisk in one cup of the cream, slowly, until it’s all incorporated. Stir in the Kahlua and set aside. Whip the remaining two cups of whipping cream, with the sugar, until stiff peaks form.

Reserve about ¼ of a cup of the whipped cream, for a garnish.

Now blend, adding a third of the whipped cream to the chocolate at a time, folding the ingredients together gently.

Chill for fifteen minutes and then serve in martini glasses, with a dollop of whipped cream, a sprinkle of cocoa powder and mint.
