Ceci Salad

‘Ceci’ are also known as Garbanzo Beans or Chick Peas.  You can use them fresh or canned.  Garbanzo are one of the vegetables that do can well and you can therefore save yourself a little time by simply resorting to the can opener.  Make sure you rinse the beans well when they come out of the can.

This salad is a little out of the ordinary, a subtle and delicate taste combination.  It’s also quite pretty

What you need:

1 14 oz. can of Ceci, rinsed.
1 Persian cucumber, diced
1/3 cup of sliced celery hearts
1/3 cup of chopped celery leaves
¼ cup of chopped red onions
1 clove of garlic, chopped
A pinch of red pepper flakes to taste
Salt and pepper

Red wine vinegar and olive oil

What you do:

Combine the ingredients in a dish and drizzle liberally with the red wine vinegar and olive oil to taste.
